5 minute breakfasts

Mornings can be hectic as you try to pull it all together in time for that important client meeting at work, for your children to get to school, for your meeting with the dentist. I know all too well what that pressure feels like. Which is why I put together three simple and easy yoghurt-granola-fruit combinations that provide you the necessary energy to get you going on those busy mornings.

Breakfast doesn’t have to be complex and elaborate, to be be tasty and nourishing.  And although I love to experiment with food and especially breakfast, sometimes I only have 15 minutes to make and eat it.  It mostly looks like a variation of this basic combination of yoghurt, granola, fruit and some toppings to spice it up. Below you can find some of my current favourites.

VARIATON #1 – serves 1

3-4 tablespoons soy yoghurt
3-4 tablespoons Matcha & Pumpkin granola
10 blueberries
4 strawberries, sliced
2 stalks red currants
fresh mint leaves

variation #1 – berries, fresh mint, soy yoghurt, granola

VARIATION #2 – serves 1

3-4 tablespoon greek yoghurt
3-4 tablespoon Figs & Vanilla granola
1 banana
1 tablespoon nut butter (any will do, I used pecan butter)
½ tablespoon hemp seeds

variation #2 – banana, nut butter, greek yoghurt, granola

VARIATION #3 – serves 1

3-4 tablespoons coconut yoghurt
3-4 tablespoons Pecan & Cranberry granola
½ pink grapefruit, sliced
2 tablespoons pomegranate seeds
fresh mint leaves

variation #3 – pink grapefruit, pomegranate, fresh mint, coconut yoghurt, granola

INSTURCTIONS

Take a bowl or plate,  add yoghurt , granola, fruit and finish off with the topping and you are ready to eat! Enjoy!

TIPS

  • cut the fruit the night before, you’ll need less time in the morning to prepare your breakfast.
  • take your breakfast on the go, add yoghurt and fruits in a sealed container, granola and toppings in another one and mix them together when you are ready to eat.
