Banana ice cream

Looking for an easy and healthy afternoon snack or summer dessert? Look no further because we have the perfect suggestion: our rich and silky banana ice cream. It’s healthy, you only need one ingredient – yes, you read that right, dairy free and no additional sweetener needed – and you can easily make it without an ice cream maker. Ingredients (makes 2 servings)
1 ripe banana

 

Start with the basics
Peel the sweet and soft banana and cut into small slices.  Add the slices to an airtight container and freeze for at least 2 to 3 hours, but preferably overnight. Once frozen, put the banana pieces in a food processor and blend until a smooth, silky consistency is reached. Be patient while blending and wait until the magic happens, this may take a couple of minutes. Serve right away and top off with some delicious fruits, coconut flakes or a drizzle of raw honey.

Go crazy with the toppings
Want to give your banana ice cream a little extra? Go crazy with the toppings and turn your dessert into a little party. Here we already give you some inspiration:
fresh seasonal fruits like berries, peaches, pomegranate

  • coconut flakes
  • cacao nibs
  • mint leaves
  • granola
  • chopped nuts
  • raw honey or maple syrup

Extra blend in ideas
Do you want to spice up the basic recipe a bit? Just add one or more ingredients from the list below and you will be surprised about the result. Get creative!

  • 1 tb nut butter (almond, hazelnut or cashew)
  • 1 tb cacao powder
  • 1/2 tsp matcha powder
  • 1/2 tsp ground cinnamon, ginger, all spice,…
  • 1/2 tsp vanilla powder
  • 1/2 lemon, juice & zest
  • 1 cup of strawberries, raspberries or blueberries

 

Additional tips

  • A food processor works better for this than a blender, since it has more space to blend the banana slices into a creamy texture.
  • You can store the ice cream after it is blended in an airtight container in the freezer,  just give it a quick blend right before serving to revive the creamy texture.
